Winemaking
Sourced from the higher Plateau Vineyard in Hawkes Bay, where cooler conditions sharpen Pinot’s character. Destemmed into open and closed tanks, hand-plunged and gently worked for balance. A mix of wild and cultured yeasts, natural malolactic in barrel and nine months in French oak, 15% new and 22% second fill, adds depth and serious character.
